Supper Club: First BBQ of 2008

Since it was such a gorgeous day on Wednesday, we decided that we had to GRILL!!! That’s right, Bob was the one that was cooking this week, we had to make him work for his supper, he’s been coasting all winter.

Pork Steaks
BBQ Sauce

Cook pork steaks on the grill without BBQ sauce until they just start to brown (they will look like they are starting to dry a bit). Have a large pan or baking dish with about a half inch of barbecue sauce in it and put the pork steaks in the sauce, turning them so they are completely coated. Place steaks back on the grill for a couple more minutes and put back into the baking dish of BBQ sauce. Cover baking dish with foil and bake in the oven at 350 degrees for 30-45 minutes to simmer in sauce (this is to ensure the pork steaks are tender).

Side Dishes: Swiss Baked Potatoes

Cucumber Salad

2 cucumbers, sliced thin
1 medium onion, sliced thin
1 tsp salt
1 cup water
1/2 cup vinegar
1/2 cup sugar
1/2 tsp celery seed
1/2 tsp mustard seed

Combine the cucumbers and onions in a large bowl. In a small saucepan combine salt, water, vinegar, and sugar – heating slightly to dissolve sugar. Add celery seed and mustard seeds. Pour over onion and cucumbers. Cover and refrigerate. Best if allowed to marinate at least one day.

Dessert: Chocolate Pudding Poke Cake

Everything turned out fabulous and we will definitely be grilling much more often once the weather turns nicer.
