Kim has done it again. More food impersonating other food! The madness!
Appetizer: Artichoke and Fennel Caponata. A different, yet fun dip that I could not stop eating. It was tart and sweet at the same time. I liked it. But the real success with this appetizer is the fact that Kate did not burn the crostini (Supper Club members are notorious for burning bread in the oven).
Entree: Meatloaf Cupcakes. Yep, that’s what I said, meatloaf cupcakes. This meatloaf recipe is slightly less dense than other recipes I’ve tried, which means it was better. It may have to do with the vegetables incorporated in the dish. Kim used all ground beef instead of pork and veal. It was a pretty a pretty way to show off meatloaf.
Side Dish: Holiday Green Beans. This was a different way to cook green beans and I have to say I enjoyed it. The dijon mustard was a bit strong but I’ll just cut that down the next time I make them. I think it’s really the sour cream that makes it good. It gives it that green bean casserole taste.
Dessert: Chocolate Mousse with Strawberries in a Chocolate Bowl. How fun was this dessert? Waste not, want not! Katie coated chocolate on inflated balloons and popped them when the chocolate hardened. The mousse was great, especially with the strawberries in it. Man, Supper Club is getting more and more creative with food presentation!
