Appetizer: Goat Cheese with Cilantro Pesto. For those who have been reading this blog for a while, you’ve noticed that we do love goat cheese. A great spread, especially if you love garlic. If you just take a bit of the pesto, it may be a bit intense so make sure you get some of the goat cheese as well, it really tones it down. Kate even added a bit of “human zest” to her dish. If you would like the recipe, just send me an email.

Entree: Chicken Souvlaki. The chicken skewers were moist and delicious, especially when mixed with the orzo salad.

Side Dish: Mediterranean Orzo Salad with Feta Vinaigrette. A very refreshing pasta salad that pares superbly with the Chicken Souvlaki. It’s a light salad that does well in the heat of the summer. I left out the kalamata olives and did not miss it whatsoever.

Dessert: Double Chocolate “Milkshake”. Katie broke out the ice cream maker for the first time and tried this recipe. She even added bits of cherries. Now, it came out more of a milkshake consistency but it was very chocolately and good. So, it goes to show that looks do not matter.
