Supper Club: January 24, 2011

Appetizer: Spinach, Roasted Garlic and Goat Cheese Dip. A wonderful spinach dip that uses goat cheese, giving it a bit of a tart flavor and enhanced by the garlic. We polished that off before we were able to take a picture.
Penne with Sausage, Eggplant and Feta
Entree: Penne with Sausage, Eggplant and Feta. If you are not a huge fan of saucy pastas, then this is a dish for you. It was very light and flavorful. I enjoyed the chunks of eggplant incorporated in the dish.
Mixed Citrus Green Salad
Side Dish: Mixed Citrus Green Salad. It was a refreshing salad that really cheered up a gloomy January evening. The dressing added to the salad but you don’t have to add it either.
Chocolate Chocolate Zucchini Cake
Dessert: Chocolate Chocolate Zucchini Cake. I am now a big fan of zucchini cake. I loved how it was sweet and moist, a great-tasting cake without the caloric guilt. You didn’t even know that you were eating zucchini.
